New Year...New Recipes

I have been inspired to eat more veggies in this new year by my resident fitness/nutrition director, Sherrie Ramsey. I found these great new recipes that Kyle and I have both enjoyed, which is a feat because my hubby is not a huge veggie fan. I hope you'll like them too!

Black Bean & Corn Salsa
1 can (15 oz) black beans, rinsed and drained
2 cups fresh or frozen corn, thawed (I used 2 cans corn)
5 plum tomatoes, chopped
1 large sweet red pepper, chopped
1 small green pepper, chopped
1 can chopped green chiles
1/4 cup chopped red onion
1/4 cup minced fresh cilantro
2 Tbsp lime juice
2 garlic cloves, minced
1 tsp sugar
1 tsp salt
1/2 tsp ground cumin

In a large bowl, combine all ingredients. Serve with tortilla chips.

Roasted Vegetable Salad
8 small carrots, sliced into rounds
6 small zucchini, sliced into rounds
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
3 squash, sliced into rounds
1 can chick peas
3 heads romaine lettuce, torn
1 cup cucumbers, sliced
2 ripe red tomatoes, sliced
Vinegarette dressing of your choice

Preheat oven to 425. Toss first 6 ingredients on large sheet pan. Sprinkle with salt and pepper and lightly spray with olive oil. Roast for 30-35 minutes, stirring once. Cool. Add rest of ingredients to a large bowl and top with veggies and salad dressing. (I also added grilled chicken to it)
